Sheet Pan Honey Garlic Chicken

I love a good sheet pan meal and they don’t get any easier than this. Everything cooks on 2 large pans and you have enough food for multiple meals yay!

Ingredients:

  • 1 family package boneless, skinless chicken thighs, trimmed.

  • 3 heads of broccoli, washed

  • 1 bag of baby red potatoes, washed and cut in half

  • 2 tbsp avocado oil

  • 2 tbsp honey

  • 1 tsp garlic (about 3-4 cloves)

  • Salt and pepper

Instructions:

  1. Preheat oven to 350 °F and line 2 baking trays with parchment paper

  2. Add trimmed chicken and prepped potatoes to the large bowl

  3. Mix oil, honey, garlic, salt and pepper. Pour over chicken and potatoes and mix thoroughly, I like to use my hands here

  4. Assemble chicken and potatoes on the sheet pans and cook in the oven for 15 minutes

  5. Remove pans and increase heat to 450 °F. Add broccoli to the pans and cook for an additional 15 minutes. I like to broil for the last 5 minutes for great colour
