I love a good sheet pan meal and they don’t get any easier than this. Everything cooks on 2 large pans and you have enough food for multiple meals yay!
Ingredients:
1 family package boneless, skinless chicken thighs, trimmed.
3 heads of broccoli, washed
1 bag of baby red potatoes, washed and cut in half
2 tbsp avocado oil
2 tbsp honey
1 tsp garlic (about 3-4 cloves)
Salt and pepper
Instructions:
Preheat oven to 350 °F and line 2 baking trays with parchment paper
Add trimmed chicken and prepped potatoes to the large bowl
Mix oil, honey, garlic, salt and pepper. Pour over chicken and potatoes and mix thoroughly, I like to use my hands here
Assemble chicken and potatoes on the sheet pans and cook in the oven for 15 minutes
Remove pans and increase heat to 450 °F. Add broccoli to the pans and cook for an additional 15 minutes. I like to broil for the last 5 minutes for great colour
